Well, it's been awhile, but here I am! This week is Cocoa cupcakes! Enjoy!

















In a bowl mix-
1/2 cup milk
1/3 cup oil
1 egg
1/2 cup water
1/2 tsp. vanilla

In another bowl mix-
1 2/3 cup flour (I use Whole-Wheat)
1 cup honey
1/2 cup cocoa
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda

Now, mix the contents of both bowls together. Pour in greased muffin pans and bake at 350 for about 20 Min.

Quick Crisp Snack Bars





INGREDIENTS
1/2 cup honey
1/2 cup reduced fat chunky peanut butter
1/2 cup nonfat dry milk powder
4 cups crisp rice cereal
DIRECTIONS
In a large saucepan, combine the honey, peanut butter and milk powder. Cook and stir over low heat until blended. Remove from the heat; stir in cereal. Press into an 8-in. square baking dish coated with nonstick cooking spray. Let stand until set. Cut into bars.

This weeks recipes is from 'Healthy Choices' and one of my personal favorites.

No Bake Peanut Butter Cocoa Oatmeal Cookies

Ingredients
1 cup honey
1/2 cup milk
1 tsp. Vanilla
2 cups oatmeal
1 stick butter
1/2 cup cocoa
3 tbs. peanut butter (Note: I like to use extra Peanut butter)
nuts (if desired)

Bring honey, butter, milk, cocoa to a boil for two minutes. Add vanilla, peanut butter, and oatmeal. Mix. Add nuts. Drop by rounded tsp. on wax paper lined dish. Layer wax paper as needed. Refrigerate. You can also freeze them, but pull them out 5-10 minutes before serving (I like mine frozen)

Sorry, due to some complications last week I was unable to post a recipe, so this weeks is a really, really good one...Oatmeal Cookies from allrecipes! Enjoy!

Oatmeal Cookies

INGREDIENTS
1 cup honey
1 egg
3/4 cup shortening
1/4 cup water
1 teaspoon vanilla extract
3 cups rolled oats
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Beat together shortening, honey, egg, water, and vanilla until creamy. Add combined remaining ingredients; mix well.
Drop by rounded teaspoonfuls onto greased cookie sheet. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes.

Honey Pumpkin Pie

INGREDIENTS
3 eggs
2 cups solid pack pumpkin puree
3/4 cup honey
1/2 cup milk
1/4 cup heavy whipping cream
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 recipe pastry for a 9 inch single crust pie
DIRECTIONS
Beat eggs slightly in a large bowl. Blend in pumpkin, milk, cream, honey, spices, salt. Pour filling into pie shell. Cover edges of shell with strips of foil.
Bake at 400 degrees F (205 degrees C) for 35 minutes. Remove foil, and continue baking for 15 more minutes. An inserted knife should come out clean when done. Cool, and serve.

Zucchini Muffins

INGREDIENTS
2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup nonfat milk
2 egg whites
1/4 cup vegetable oil
1/4 cup honey
1 cup grated zucchini
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease muffin tins lightly with oil or spray with a non-stick cooking spray.
Combine whole wheat flour, baking powder, salt and ground cinnamon, mix thoroughly.
Mix the milk, slightly beaten egg whites, oil, honey and shredded zucchini together. Pour into the dry ingredients and stir until just barely moistened. Batter should be lumpy. Fill muffin tins 2/3 full with batter.
Bake at 375 degrees F (190 degrees C) for 20 minutes or until lightly browned.

Carrot Cake

INGREDIENTS
2 eggs
1/2 c. honey, warmed
3/4 c. vegitable oil
1/4 c. buttermilk
1 1/2 c. grated carrots
1/2 c. choped pecans, almonds, or walnuts
1 1/4 cup whole wheat pastry flour
1 tsp. baking soda
1 tablespoon ground cinnamon

Preheat oven to 300 degrees. Butter an 8-inch-square
baking pan.
In a large bowl beat eggs. Add honey, oil, and buttermilk,
and beat until well blended.
Stir in carrots and nuts.
In a separate bowl sift together flour, baking soda,
and cinnamon. Fold into carrot mixture and mix well
but don't beat. Pour batter into prepared pan and
bake for one hour.
Romove from oven and allow to cool for ten minutes.
